1) Soya sauce has salt. So adjust seasoning accordingly.
2) It`s good to use a day old cooked rice. Or use rice which is cold. Never use hot rice.
3) If rice vinegar is not available, substitute with normal vinegar.
4) Soya sauce has salt, so be careful while adding salt.
5) Do not forget to add celery stalks while boiling rice.
6) Do not over cook rice.
7) If using chicken, cut chicken to small pieces. In hot oil, first fry chicken and continue .
8) If rice vinegar is not available, use apple cider vinegar.
9) Vegetarians can omit egg.

1) Cook rice by adding salt to taste and celery stalks till 3/4th done. Drain and let it cool preferably over night. Or remove to a tray to cool. Throw away celery stems.
2) Heat oil, add garlic, ginger and 1 tbsp.of celery. Stir fry for one minute.
3) Add onion, beans and carrot and stir fry till almost cooked but still crunchy.
4) Beat eggs lightly with a pinch of salt.
5) Move veggies to a side and add eggs and scramble.
6) Then add in rice and mix everything together. Add soya sauce, pepper powder and vinegar. Mix well.
7) Add sugar and sesame oil. Mix well
8) Granish with spring onion greens and remaining celery.
Serve with gravied cauliflower manchurian, chilli chicken or chicken manchurian.
