Be careful if adding salt, since cheese has salt.

1) Cut brinjal into very thin roundels.
2) Heat a pan with 1 tsp. oil.
3) Let the roundels cook. Turn & cook on both sides. Remove.
4) Cut mozarella cheese and pineapple into cubes. Place the cheese and pineapple cubes on one half of the brinjal roundel and cover with the other half.
5) Heat oil and add turmeric powder and chilli powder and fry. The masalas should not burn. 6) Place the cheese enclosed egg plant semi circles on the pan and fry lightly on both sides. The cheese should melt lightly.
Serve warm, immediately after cheese starts melting.
