These are the thick American style pancakes served for breakfast. Pancakes are eaten in English speaking countries on Shrove Tuesday (also known as Pancake day), which is the day preceding Ash Wednesday, (the first day of Lent. Pancakes are eaten on that day as they are made of main foods like sugar, fat, flour & eggs whose consumption was traditionally restricted during Lent.
1) Bananas should be very ripe. Use any variety of bananas.
2) If lactose intolerant substitute milk with buttermilk.
3) Usually maida/ white flour is used for pancakes. Substituting with whole wheat flour makes it healthier.

Blend bananas with milk and egg in a blender. In a bowl, combine the flour, baking powder, cinnamon, sugar and salt. Combine the milk mixture with the flour mixture, until a lumpy batter forms. The batter should not be loose. Keep for 5 minutes. Lightly grease a large non-stick pan. For each pancake, pour 1 ladle of the batter onto the hot pan. Don`t spread batter. Just tilt the pan lightly for the batter to spread lightly. When bubbles appear on top, apply little butter and flip over and cook till done.
Serve warm with honey or jam/ marmalade or preserve. Pancakes are traditionally served with maple syrup.
