Description

This simple grilled dish has all the authentic Kerala flavors, curry leaves and coconut oil.
Curry leaves are native to India. The green leaves have a distinct aroma which can be experienced while cooking. Apart from being widely used in many cuisines, it is also considered to have medicinal value.These leaves are used extensively in South Indian cooking specially for tempering. It is said that these leaves are added to curries to absorb toxins. It is a good source of dietary fibre. It is also a good source of iron. Curry leaves are good to fight anaemia, diabetes and cholestrol. Also it aids in digestion and helps in hair growth and prevents premature greying.
Coconut oil contains saturated fats that are different from those present in animal fats. Like other vegetable oils, coconut oil also does not contain cholesterol. Organic virgin and refined coconut oil is readily available in the market. Coconut oil is commonly used in cooking and frying in South Indian cusine, specially Kerala. It is also used for head and body massage. Coconut oil contains about 50 per cent lauric acid. The only other abundant source found in nature is human breast milk. Lauric acid is good for health.Even though coconut oil is a fat, it actually promotes weight loss because of the healthy medium-chain fatty acids. These fatty acids do not circulate in the bloodstream like other fats, but are sent directly to the liver where they are immediately converted into energy, just like carbohydrates. So the body uses the fat in coconut oil to produce energy, rather than be stored as body fat. Coconut oil is very effective against a variety of infections due to its antifungal, antiviral, and antibacterial properties.

Note

1) Devein the prawns or it may cause upset stomach.
2) Prawns will turn orange color after it is cooked.

Method

1) Clean, shell and devein the prawns. Leave the tail intact.
2) Mix all the marinade ingredients well and marinate the prawns in this mixture for half an hour.
3) Oil skewers / tooth pick well. Insert toothpick or skewer through the prawn.
4) Heat the oven at 175 C in grill mode. Oil the wire rack or baking tray well and grill the prawns for 6 minutes. Turn and grill for another 7 minutes.
5) You can even grill the prawns in an oiled pan or grill plate. Then increase the time to about 2 minutes on each side.

Serving Suggestions

Serve with lemon wedges.
