Description

With your microwave you can easily make paneer,and there is no messy cleaning up. In a microwave, milk does not stick to the bottom of the vessel like it often does while cooking on a stove. Besides, the quality of the cottage cheese is smooth and velvetty. The cleaning of glass dish used for making paneer is easy.

Note

1) Lemon juice can be substituted with really sour curd or buttermilk.
2) The amount of lemon juice may need to be increased depending on sourness.
3) The greatest drawback of making paneer in a microwave is that you may not be able to make a large qty. of paneer at a time.

Method

1) Bring milk to a boil, for 8 minutes at 100 percent power. I did at 750 watts.
2) Stir in the juice of lemons. The milk will curdle and a greenish whey will seperate from it. Cook for another minute. Let it stand for two to three minutes more.Strain it into a cloth.
3) Wash the cloth bundle with paneer under clean running water. This prevents sourness to be washed away and also stops further cooking. Over cooking makes paneer tough.
4) Wrap the paneer in the muslin into a square or rectangle shape. Wrap tightly and place it is a sieve or collander.Keep heavy weight on paneer for 1 hour to drain off any remaining water and also to give shape.
8) Cut into desired shapes after its sets. Can be stored in the freezer for a couple of weeks.
Thaw before using.
