Description

Cafreal is a spicy chicken preparation of Goa. The preparation originated from the Portuguese colonies in the African continent. It was introduced into the Goan cuisine by the Portuguese. Cafreal originates from the word cafre meaning African black or ‘chicken prepared the African way’. The chicken was cleaned and marinated with lime, salt, ginger-garlic paste and placed over a heated grill and turned around frequently so that it gets uniform heat. After taking it off the fire, small cuts are made on the chicken so that the masala seeps into it. The whole process is then repeated. Nowadays chicken cafreal is prepared by frying. A good chicken cafreal should be soft, tender and succulent. It should have the pungency of chillies.

Note

1) It is preferable to marinate chicken for atleast 24 hours.
2) Once heated the effect of alcohol will go leaving only the flavor.

Dry roast
1  InchCinnamon
3  No.sCloves
1  Tbsp.Poppy seeds
1  Tbsp.Pepper corns
0.5  Tsp.Cumin seeds

Method

1) Dry roast cinnamon, clove, peppercorns, cumin and poppy seeds. Powder and keep aside.
2) Heat 2 tbsp.oil. Add tamarind and fry lightly. This frying gives a good taste.
3) Then add garlic, ginger and green chillies to the oil and fry till chillies are soft.
4) Now add corriander leaves and turmeric powder. After corriander leaves are slightly cooked, remove and let it cool slightly.
5) Grind the corriander leaves mix with the dry roasted ingredients.
6) Add salt to this ground mix and marinate chicken in this preferably overnight or for 48 hours.
7) After marination, heat remaining oil, add chicken and brown lightly.
8) Then add marinade and cook for about 30 to 40 minutes till chicken is cooked.
9) At half time turn chicken and cook on the other side.
10) Lastly, if using, add rum.And heat well.
