Description

Pronouced as `kesidiayas`,( as `LL` is pronounced as `y`), this is a very popular mexican dish. A good melting cheese like mozzarella is important for this snack. Quesadillas, somewhat resembles an Indian cheese paratha.

Method

1) Make Tortillas, sour cream, paneer and paneer hariyali tikka according to the recipes (refer See Also).
2) Heat a pan. Place a tortilla on the pan. Apply half tablespoon oil on the tortilla. Turn to the other side and apply another half tbsp.oil and cook till brown spots appear.
3) Spread paneer capsicum mix on one half of the tortilla. Add about 3 tbsp. of cheese on top of paneer.
4) Fold the tortilla covering the mixture into half moon shape. Press down on the tortilla for a few seconds, allowing the cheese to melt
5) Flip the quesadilla over to toast the other side till dark brown spots appear and tortillas are crisp.

Serving Suggestions

Serve hot as it will be really crisp while warm. Serve with Pico de gallo or Guacamole and sour cream .
