1) If cheese has salt, adjust salt in the marinade considering that.
2) You can use any colored capsicum, but red capsicum has a nice sweetness to it.
3) 20 minutes of baking may make the fish lightly hard, but will make the bread crumbs crunchy. Also if your fillets are thin reduce baking time accordingly. I had fillets each weighing around 225 grams each. Hence baked for arond 18 minutes.

1) Clean and drain water from fish. Apply marinade ingredients on fish and keep aside for 30 minutes.
2) Cut onions and capsicums into thin strips.
3) Pre-heat oven to 200 degree C in baking mode.
4) Add capsicum, onion and cheese on top of fillets.
5) Put bread crumbs on top and press lightly.
6) Dot bread crumbs with butter all over the fillets.
7) Bake fish for 15 to 20 minutes.
Serve with garlic toasts and a salad or pickled / brined veggies. You can also pair this with soup.
