DISH NAME : TANDOORI GOBI (GRILLED OR BAKED CAULIFLOWER)

Description

Eventhough the name of the dish says tandoori gobi, infact cauliflower is cooked in an oven replicating the taste of tandoor minus the smoky flavor.

Note

1) Cauliflower can be grilled at grill mode at the same temperature for the same time.
2) Ideally keep cauliflower on wire rack and bake or grill. If keeping on a wire rack, keep a tray underneath to collect drippings. If kept in tray, sometimes the flower will be drenched in water. Liberally brush the wire rack and baking tray (specially the wire rack) with oil to prevent sticking.
3) Use hung curd or very thick set curd. Or the marinade will turn watery and if kept in a baking tray will turn soggy.

TANDOORI GOBI
350  Gm.Cauliflower
1  Tsp.Vinegar
  Salt to taste
1  Tsp.Turmeric powder
MARINADE
1  CupHung curd
3  Tsp.Ginger - garlic paste
1  Tbsp.Chilli powder
1  Tsp.Garam masala powder
2  Tbsp.Mustard oil
1  Tsp.Kasoori methi / dried fenugreek leaves
  Salt to taste
GARNISH
0.5  Tsp.Chaat masala

Method

1) Cut cauliflower into big florets & prick the stems with a fork to allow the marinade to penetrate.
2) Boil a pan of water, add vinegar, salt, turmeric powder & cauliflower. Boil until cauliflower is just tender, drain & allow to cool.
3) Mix all the marinade ingredients & mix in the cauliflower. Let it marinate for 2 hrs.
4) Pre-heat oven at 200 degree C in bake mode.
5) Cook cauliflower till golden brown for 25 to 30 minutes, turning after 15 minutes.
6) Sprinkle Chaat masala before serving.

Serving Suggestions

Serve hot with green chutney as a starter or as an accompaniment with tandoori chicken.
