Donne Biryani is a rice dish from Karnataka. it is famous for its earthy flavor, green color, and traditional presentation.
It gets its name from the Kannada word donne, which means a traditional cup made from dried Areca palm or banana leaves. Unlike long-grain Basmati rice used in North India, Donne biryani uses short-grain aromatic Seeraga Samba (or Jeera rice). A very notable ingredient in this biryani is stone flower or kalpasi. It is a lichen.
1) Increase or decrease chillies according to your spice tolerance level.
2) I used curd which is mildly sour.
3) Wash rice, then soak. Washing after soaking will break grains.
4) I have used nicely aged rice, hence did not add lime juice to water when cooking rice. If the rice is not aged, add 1 tsp. of lime juice.
