This dish is named after a Willingdon Club member, Devi Prasad Kejriwal, who requested the combination of eggs with cheese so frequently that the club named the dish after him and placed it on their menu. According to some food writers, Kejriwal was a Marwari, who don't eggs. Kejeriwal didn't want to be seen eating eggs publicly, so he ordered them covered in melted cheese and chilis
1) Eggs kejeriwal is usually served on top of paav bun, which is a staple bread of Mumbai. You can substitute it with any bun or bread.

1) Cut the bun in half horizontally.
2) Heat butter in a pan and toast buns till nicely done.
3) In the same pan, add oil & slightly saute onion and chilli till it is translucent.
4) Now add tomatoes and cook till nicely done. add a pinch of salt.
5) Make a space in the middle of the tomato onion mix and add the egg. Keep a lid and cook on slow fire.
6) After eggs are poached well, put off fire and add grated cheese on top of egg.
7) Spread green chutney on both sides of bun. Carefully keep the egg gravy mix on top of it.
Serve warm.
