Description

Victoria sponge cake is also known as the Victoria sandwich or Victorian Cake. It was named after Queen Victoria, who was known to enjoy a slice of the sponge cake with her afternoon tea. A typical Victoria sponge consists of raspberry jam and whipped double cream or vanilla cream. The jam and cream are sandwiched between two sponge cakes. the top of the cake is not iced or frosted but only dusted with icing sugar.

Note

1) I have used strawberry sauce instead of raspberry jam. You can use strawberry jam, preserve or any other jam.
2) I used non dairy whipping cream. Traditionally dairy whipping cream is used.

250  Gms.Strawberries sliced
1  CupStrawberry sauce
1.5  CupsCream, whipped
Decoration
0.25  CupIcing or confectioners sugar for dusting

Method

To make cake:-
1) Grease and line two, 10 inch cake tins with butter paper.
2) Beat butter and sugar till fluffy and creamy.
3) Add eggs one by one and beat again.
4) Sift flour thrice with salt and baking powder.
5) Pre-heat oven to 180 degree Celsius.
6) Fold in the flour gently into the butter sugar mix.
7) Divide the batter between 2 tins.
8) Bake in the pre-heated oven for 20 to 25 minutes or till lightly golden on top. A skewer inserted into the middle of the cake should come out clean.
9) Let the cakes cool in the tin on wire racks.
For the filling:-
1) If the jam is very thick, warm jam on stove top by adding 2 tbsp of water. If using sauce use as it is.
2) Spread sauce/ jam on one cake. Arrange strawberry slices on top.
3) Spread cream on top.
4) Sandwich with the other cake. The nice top of the cake should be on top. Do not press the cake.
Decorating:-
1) Sift icing sugar to remove lumps.
2) Dust icing sugar on top of the cake. You can use a stencil to dust icing suagar and give design.
