Description

Bell peppers are also known as capsicum in many parts of the world. They come in red, yellow and green colors. Green is commonly seen and used. Red is the sweetest among the three.

300  Gms.Capsicum , red
100  Gms.Potato
2  Tbsp.Butter
2  Tsp.Garlic ,chopped finely
3  Tbsp.Onion chopped finely
2  CupsVegetable stock
  Salt to taste
2  Tbsp.Fresh cream
2  Tsp.Pepper powder
1  Tbsp.Oil

Method

1) Brush oil on bell peppers. Roast it on gas flame till black spots appear. Immediately keep in a bowl and cover with a cling film. Let it sweat. After some time remove and peel. Deseed and slice.
2) Boil potato. peel and dice.
3) Heat butter. Add garlic and onion and saute till soft. Now add potato and peppers and saute for about 5 minutes.
4) pour in stock. Bring to a boil after adding salt and pepper.
5) Remove and leave to cool. Then puree in a blender.
6) Serve with swirls of cream on top

This soup can either be served hot or cold.
