Description

Aubergine is also known as egg plant or brinjal and is usually purple in color with a glossy texture. Some aubergines are light green in color.

AUBERGINE SALAD
200  Gms.Aubergines
1  No.Red chillies, fresh
2  Tbsp.Oil
1  Tbsp.Spring onions greens chopped fine
  Salt to taste
0.25  Tsp.Turmeric powder

Method

1) Cut aubergine into thick roundels. Apply turmeric and salt. keep aside for sometime. water will ooze out of aubergines. Discard water. this prevents bitterness of aubergines.
2) Heat oil and fry aubergines till done.
3) Before serving, add Ketjap manis dressing.
4) Garnish with spring onions and choppede chillies.

Serving Suggestions

Can be served warm or at room temperature.
