Shakshouka or shakshuka is an Arabian dish where eggs are poached in tomato sauce. Shakshouka is served with bread or pita bread.
1) I used kashmiri chilli powder which gives intense color with very little heat.
2) To make tomato puree, make a cross at the bottom of the tomatoes. Add to boiling water and let it boil for5 minutes. Skin will start to peel. When cool, remove skin and cut and deseed. Blend to a smooth puree.

1) Heat oil. Add onions and fry till transparent and soft.
2) Add garlic and chilli and fry.
3) Now add capsicum. Stir for a minute or so.
4) Add chilli and cumin powder. Fry.
5) Add tomato puree and cook for a few minutes till tomato is cooked and thick.
6) Add 1 cup of water and salt to taste. Let it come to a boil.
7) Make 4 gaps in the tomato gravy. Break one egg at a time into the gaps made.
8) Season the eggs with salt to taste. Do not stir eggs.
9) Cover the pan and cook on low heat till eggs look set and cookeed.
10) Garnish with corriander leaves chopped.
Serve with bread, chapathy or pita bread.
