Note

1) I fried and baked chicken strips and found baked strips tastier than fried ones.
2) Brush rack liberally with oil or chicken will stick.

CHEESE AND CHICKEN FINGERS
2  Tsp.Olive/vegetable oil
1  CupBread crumbs
0.33  CupCheddar / parmesan cheese grated
0.25  Tsp.Chilli flakes or powder
  Salt to taste
3  No.sEgg whites
750  Gm.Chicken breast, cut into strips/fingers
2  Tsp.Ginger-garlic-green chilli crushed
1  Tbsp.Fresh lemon juice

Method

1) Marinate chicken strips with ginger-garlic-green chilli paste, salt and lime juice for 45 minutes.
2) Preheat oven to 250 degree C (475 degree F). Place rack with a tray below to collect drippings; grease rack liberally with oil.
3) In a plate, combine breadcrumbs, cheese, chilli, and salt. Set aside.
4) In a large bowl, whisk egg whites until well mixed.
5) Dip chicken fingers in egg-white mixture, then into bread crumbs to coat evenly; Press firmly so it adheres. Arrange chicken on rack , brush chicken lightly with oil.
6) Bake chicken 10-12 minutes or until crust is golden brown. You can even fry the breaded chicken fingers.

Serve with any dipping sauce.
