Description

Pizza, the italian bread is pronounced 'peet-za'. It is an oven baked bread topped with tomato sauce, cheese and veg and non veg ingredients. Traditionally pizzas are baked in a wood fired brick oven.

Note

1) Make pizza base. Refer Pizza base-wholewheat recipe.
2) Some people puree tomatoes and add to sauce, but i prefer to saute till it becomes pulpy. Then puree coarsely. Eventhough it takes more time, it adds body and nice sweetness to the sauce.
3) Try to use 3 capsicums of 3 different colors-yellow, red and green.
4) Olives are optional.
5) Cheese can be increased or decreased according to your preference.
6) Since we are making thin crust pizza, add only a thin layer of sauce.

250  Gms.Onion chopped finely
3  Tbsp.Olive oil
750  Gms.Tomato
0.5  Tsp.Pepper powder
1  Tsp.Sugar
0.5  Tsp.Oregano, dried
1  Tsp.Basil, dried
  Salt to taste
1  Tbsp.Garlic ,chopped fine
3  No.sCapsicum
200  Gms.Chicken,boneless,boiled or grilled
1.5  CupsMozarella cheese, grated
2  Tbsp.Extra virgin olive oil
0.25  CupOlives

Method

1 Make an '+' mark at the bottom of tomatoes.
2) Boil water (to immerse tomatoes). Add tomatoes to it and bring to a rolling boil. Boil for about 3 minutes till tomato skin just starts to peel. Take tomatoes out and add to normal water. when it cools remove skin and seeds. Chop roughly.
3) Heat olive oil in a pan.
2) Add garlic and fry till light golden brown.
3) Then add onion and saute till just soft.
4) Add tomatoes and cook till it forms a smooth pulp.
5) Add basil, oregano, salt, sugar and pepper powder.
6) Adjust seasoning.Remove from fire. keep aside to cool.
7) Cut capsicums into strips.
8) Cut olives into roundels.
9) Shred or cut chicken into small pieces.
To assemble pizza
1) spread 1 tbsp. olive oil on pizza base.
2) Spread tomato sauce on it.
3) Add 1/2 cup mozzarella to the base.
4) Arrange capsicum, chicken and olives on pizza.
5) Spread remaining grated cheese on top of the capsicum- chicken layer.
6) Add remaining olive oil on top.
7) Bake in a pre-heated oven at 200 degree celsius for about 12 to 15 minutes or till the cheese starts to melt. Do not overbake. Cheese will become tough.
8) Cut into wedges and serve.

Serving Suggestions

Serve hot with the cheese bubbling.
