DISH NAME : TRUFFLE CAKE

Description

This cake is called a truffle cake, as the ganache used for making chocolate truffles is used to frost this cake. Some cakes are called truffle cakes as chocolate truffles are used to decorate the cake.

Note

1) I used a 10 inch cake tin and cut the cake into two horizontally when cool. Or you can make 2 cakes in two 8 inch tins. Then you need not cut the cake into two horizontally.

Method

1) Pre-heat oven to 180 degree C.
2) Line and grease a 10 inch cake tin.
3) Sift flour, cocoa, baking powder, baking soda and salt.
4) In a bowl, beat eggs and sugar. Add vanilla and beat till the mixture is creamy.
5) Add buttermilk and beat and then add oil and beat again till incorporated well.
6) Fold in flour mixture to the buttermilk mix, a little at a time, mixing gently.
7) Add hot water to the mix and mix in gently.
8) Pour batter into the prepared baking tin and bake for 35 to 40 minutes or till a skewer inserted comes out clean.
9) Cool the cakes on a cooling rack.
10) When cool, remove cakes and then frost/ ice.
Assembling the cake:-
1) Make ganache (for recipe check 'see also').
2) If the cake was baked in a 10 inch pan, cut into two horizontally.
3) Spread ganache on a cake thickly. Sandwich with the other cake.
4) Spread ganache on the top and sides of the cake smoothening well with a palette knife.
5) Keep in the fridge for about 2 hours to set.
